A model will shift to it's default one in-game (which is goku.mdl), if you put a corrupted or non-HL model. Make sure you replaced it properly with the same filename as before, and you should be fine. Also, take your models from 'proper' sources, ones that don't provide dodgy or corrupted ones.

Yes, you do need the latest version of HL/CS in order to play ESF. And the crashing isn't always related to the version, but often to the video mode that you are using. Try switching between different video modes (preferably OpenGL) at stable resolutions.
