I recently finished watching Berserk, and now I'm kind of at a loss as to what anime I should try and see next. I'm pretty open minded, but my preference would be something like Gungrave and Berserk. Something that focuses on character development and character relationships, with some action thrown in for good measure.

So recommend away!

Have you tried the berserk manga yet? It continues where Berserk ends.

As for a good anime. I suppose Helsing is pretty good.

Yeah, I checked out the Berserk manga the day after I finished the anime. I swear, I've never seen such a cliffhanger in my life ;(
It's the first manga I've ever read, and I don't enjoy it as much as the anime, but it still seems great so far. It just feels strange without the voices I got to know, and the great sound track the anime had.

I've already seen Hellsing, it's a good anime. It's not too deep, but it's good all the same.

It'll probably help if I list anime I've already seen. So;

Gungrave
Berserk
Hellsing
Elfen Lied
Samurai Champloo
Dragonball Z

Neon Genesis Evangelion and Great Teacher Onizuka. My two favourite animes of all time. And as a plus, they seem to fit your criteria nicely. They are both heavily based on character development and interactions, and both also have some action in it.

So ya, I heavily recommend those two, then if you want more, read the manga afterwards. They're both really satisfying because the GTO anime, although nearly 50 episodes long, only covers roughly half of the manga. And the Evangelion manga is written by Yoshiyuki Sadamoto, the character designer of the anime. So while it follows the same basic story, there are many changes littered throughout the manga. It's basically he's interpretation of the same story.

So in short, watch Evangelion and GTO, followed by their respective manga's. It'll be a very satisfying experiance.

If you haven't all ready seem Samurai X OVA 1-4 do so. You might also want to try Escaflowne and Wolf's Rain, they both have some nice character development and action.

Yeah, watched the first 6 episodes last night. Seems like a cool anime so far. Not on the same level as Gungrave or Berserk, but still cool.

Naruto and bleach.

Currently I like bleach more, naruto's annoying fillers are getting a bit too annoying...
