To have it set to automatic quarantine, go to "Settings", select the "Auto-Scans" tab and then check "Quarantine objects prior to removal".

If you want to quaratine a specific file/object, you need to run a scan first. Once the scan is completed, click on the check box next to the item you wish to quarantine. Now just click the "Quarantine" button and Ad-Aware will quarantine the selected objects.

Edit

I didn't notice you were using the older version. You should get the latest version of Ad-Aware.

To set up an automatic quarantine, you need to click the "Configure" button. If I remember correctly, in the first tab there should be an option that says "Automatically quarantine objects prior to removal". As for quarantining a specific object, I don't know if you can. It's probably the same as I stated above. Run a scan and select an object to be quarantined.
