Why is it that my esf version has only few characters ( goku, vegeta, piccolo, gohan, kriliin, buu, cell) and they only have one transformation! T_T i dont know what todo. Its version is 1.2.3

Cause its a beta and its not complete yet, each character only has one transformation at this time.
As for characters you should have goku, vegeta, piccolo, gohan, kriliin, buu, cell, trunks and frieza.

It also has trunks and frieza. And it has one transformation because it's an older version. ESF version 1.3 will have all the transformations. You can grab the beta from the website.
