I was wondering if anyone here could give me the short version of why observing light changes it from particles to a wave?

Technically light is a wave thats bounced off particles. Different particles bounce off different wavelenghts. ^^

Light acts as both when it feels like it.

There are things it does such as diffraction which can be only explained by it being a wave (particles can't bend through gaps). However, quantisation can only be explained if it were a particle. Stuff like reflection and refraction can be explained by both models.

Basically, in order to explain all the stuff light does, it needs to be treated as both.

Science does not yet have a complete description of light, only theories. We don't know why it acts as both. But yeah, double slit and defraction experiments will help make sense of it.
