A lot of Gundam ones, specifically 00 and G Gundam, if only for the songs. All of Deathnote's openings. The Naruto opening of "Fighting Dreamers". Outlaw Star.

I'd personally have to say Fate/Stay Night being one of my favorites. Second opening by the way.

FMA's first opening is pretty cool too considering they did their research on various "alchemical symbols."
