Changing the text that says "Welcome to the real world??

You mean when you join a server and it says that on the screen?
That's done with Admin Mod, and probably AMX mod too. You can change to it to display anything you want, but that's what it says by default.

Ah, didn't see you wanted to change it.
Using Admin Mod, open adminmod.cfg (should be in esf\addons\adminmod\config) and edit the following line:
// This is the message displayed to everyone after connecting.
admin_connect_msg "Insert Message Here"
You could change it with that command as a console command as well, but you'd have to do it each time you made a game.
